I really like the remix of Self made man. It took the good bit of the demo and managed to make something of it. link
I also really like the remix of Freddie's New York Demo (same reason as above) also nice use of Radio Ga Ga synths: link
Also Lord Fickle's Prophet's song remix (available from the remix page here. While nothing beats the original his shortened version is really well done.
There's loads more I like but I could be here all evening writing them down.
