I can certainly answer the latter part - There were a good bunch of songs released in the same manner from the European leg of the 2005 tour, so unless for some strange reason they've been removed you should still be able to find them in the Queenonline store or suchlike.
And in an attempt to answer the first part, given they only select the best of performances of a song to release as a download I imagine the tracks are already pretty brilliant to start with, and wont require editing at all.
I would very very seriously doubt there are any overdubs, as the band certainly wont have time to be fiddling about with something like that and again, these performances are supposedly the best, and therefore really arent likely to need it.
I imagine the closest thing to editing that goes on is a bit of mixing to get the levels right, which they wont necessarily have been during the gig - but that doesnt involve introducing or removing anything.
I'm against overdubs myself, but if my band was to mix songs from our shows for uploads (free or not) during our tour(s), the only thing I'd remove would be bad feedback or unnecessary noise (eg. 'silence' during moments the vocal microphones are not in use), so as to bring the music and audience in the mix moreso, as it should really be IMO.
