There are great VSTs available for the ARP2600, various Moogs, but I don't think I've ever seen one for the DX7.
I haven't looked since my brother went and bought an actual DX7, see :)
I thought Roland's VST technology was pretty good, and it is to a point, but when I bought my Nord Electro, it made me wonder why no one else can get the B-3 or Fender Rhodes to sound THAT good.
And I've got 3 top of the line Rolands, the Fantom, XV88, and an RD-700.
Now Roland's got this new Fantom G out that has something even better...
I too have FM7/8 and can definitely vouch for the DX7 sounds. It's all there! Very nice. Especially for WWTLF which I made last year for our WWRY show.

Adam, can you recommend any VSTs that are knocking about at the moment? I have Garritan orchestra and Addictive drums but am looking for more synth based vsts

I strongly strongly recommend EZDrummer. Absolutely chincy title, and the interface makes it look slightly like a toy,
but the drum samples are excellent (and not too repetitive). There's a good deal of control over each drum sound (and the room mics too) so you can get heaps of sounds, if you know what you're after.
Depending on what sort of song you're writing, most rhythms are covered in the MIDI library anyhow.
No joke, it's fantastic. I love the thing.
Aside from that, I've got some of the VST synths that have been mentioned in this thread, and I use Guitar Rig 2 for guitar effects. (Some people tell me to ditch it and go with Amplitube, haven't tried it yet).
Also, this wanders away from VSTs and towards instrument libraries, but I absolutely love the Orchestral JamPack from Apple. Great sounds.

If it's orchestral things you want. Buy the Vienna Symphonic Library. It's just amazing! Especially in combination with the performance tool.
