I'm not 100% sure about the order but I think it WAS this way (See What A Fool I've Been on a surprising position in the setlist).

And the rock 'n' roll medley is missing on bootlegs?

Yes, most bootlegs feature only the first six tracks. The rest is available only on a master tape that is in posession of a private collector. Even BBC transcription discs (those mega expensive LP's) feature only the first 6 songs + commentary of the presentor.

Tracks 7-10 leaked last year or so. Tracks 11 and 12 remained megarare.

it would be great for people who attended those concerts to listen 'Father To Son' later in the record, with much more guitars, vocals, piano and acoustic, and additional sections

Because the master tape was bought by a private collector (in an auction I guess) and he hasn't traded it with anybody yet. In fact I'm surprised that the r'n'r medley leaked some two years ago.
